Got Zucchini?

If your garden is like everyone else's, you have a TON of zucchini right now. Here are some recipes:

~Zucchini Bites~ from Jenn's Gardening Spot Blog

No! Zucchini doesn't bite! I came up with an idea to make zucchini in smaller bite size pieces! I have a miniature muffin pan, that worked great for this idea! With 4 kids, having snacks they can just grab and go is Awesome! So I made the zucchini mixture and made mini muffins! Here's the recipe I used.

1 1/2 cups of all purposed flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon nutmeg
1 beaten egg
1 cup sugar
1 cup finely shredded,unpeeled zucchini
1/4 cup cooking oil
1/2 cup chopped walnuts or pecans

Oven on 350 degrees
Since I used a mini cupcake pan cooking time was 20 min or so.
For doing a loaf cook for 50min.
Spray the pan you are using!
In 1 bowl combine Flour, cinnamon, baking soda, salt, baking powder, & nutmeg. Mix it up and make a well in center of mixture and set aside.
In bowl number 2. Combine egg, sugar, zucchini & oil. mix well.
Add zucchini mixture to flour mixture. Stir until moistened (batter should be lumpy)
Then spooned the mixture into my mini cupcake pan. Baked for 20 min. check with toothpick to check if cooked all the way through. When done, I popped em out of pan and placed on baking rack to cool. Let them cool for an hour and put them in a container!

3 eggs
1 c. veg oil
2 c. sugar
2 c. grated zucchini
1 tsp. vanilla
3 c. all purpose flour
1 tsp. salt1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon (I also add a little nutmeg)
1/2 c. chopped nuts (optional)

Preheat oven to 350. Beat eggs and oil until foamy. Add sugar, vanilla, and zucchini and mix well. Add dry ingredients and nuts. Mix well. Pour into 2 greased loaf pans. Bake for 45 minutes to an hour (mine always takes closer to an hour, but I guess it depends on your oven.) This bread is really moist and good! The recipe says it freezes well, but I haven't ever frozen it. I have made it a ton lately since the zucchini in my garden have gone out of control. I also read that you can grate and freeze zucchini to use in bread later.
